Glycation process and aging
Consuming too much sugar triggers the glycation process. When sugar molecules bind to proteins in the bloodstream, harmful compounds called advanced glycation end products (AGEs) are formed. AGEs break down collagen and elastin, which are the proteins that keep the skin firm and youthful. The breakdown of collagen and elastin leads to wrinkles, sagging skin, and loss of elasticity.
Additionally, AGEs produce oxidative stress and inflammation that exacerbate skin aging. This not only accelerates the formation of wrinkles but also makes the skin look dull and tired. As a result, a diet high in sugar can greatly accelerate the natural aging process, making a person look older than they actually are.
